Easy Egg Bites

It doesn't get easier than this if you're looking for a high protein breakfast that is ready to go because you don't get up early enough to plan ahead! That is our house most mornings, especially with school in full swing again! To be honest I never am ready to bake or cook in the mornings so I am always happy to find a healthy option that can make mornings that much easier! So I guess technically I AM planning ahead just in a different way! :)

Enjoy these!! They are simply delicious!

Ingredients:

8 eggs

1/2 cup cottage cheese

salt & pepper

shredded cheese

meat of choice

veggies of choice

Instructions:

Add your eggs, cottage cheese, salt and pepper to a blender and blend until smooth

Line your muffin tray with your silicone muffin liners(highly recommend these bad boys, they are amazing! I never have good luck with the paper liners.)

Add your cooked meat, chopped veggies, shredded cheese to the bottom of the liners

Pour your egg and cottage cheese mixture on top

Bake at 350 for 22 minutes

Have fun with these and put your own spin on them! My boys like them pretty simple so we often just add cheese or cheese and sausage! Microwave for 20-30 seconds in the AM and enjoy!
